Recipe: Easy Pumpkin Soup

This easy pumpkin soup is rich in vitamins low in calories! 

Tip: If you are time poor look the pre-chopped pumpkin in most supermarkets. Slide onto a baking tray and roast away! 

Pumpkin Soup Recipe

Ingredients 

  • 2 packets pre-chopped pumpkin or dice into chunks 
  • 1 leek 
  • 1 1/2 teaspoon olive oil
  • 1/2 red onion or white onion 
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • Salt & black pepper to taste
  • 1 teaspoon paprika 
  • 1-litre vegetable stock
Pumpkin Soup Recipe

Method

Roast pumpkin with a drizzle of olive oil

Add dry spices

Cut  leeks into slices

Finely chop onions

Roast all vegetables on a roasting tray till golden brown

Remove vegetables from oven and add to stove top

Add stock and hot water to get a thick consistency 

Blend 

Add more spices if required  

Serve with crusty bread and a dollop of cream
