Often been compared to a dessert type cheesecake . Get ready to lick your spoon and go for seconds. Guaranteed happiness! Ranked number one in desserts in my household!
Ingredients
- 1 packet tennis biscuits or nice biscuits
- 1 tablespoon butter
- 1 cup cream
- 3 1/2 blocks of cream cheese
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla essence
- 1 can of tin caramel
Note
You can serve this as a dessert option as it's not a traditional cheesecake recipe in the sense that it's not as dense as a normal cheesecake. The caramel adds another texture and the sweetness cuts through the tartness of the cream cheese. This cake would serve 12 but trust me you only need a slither as it's rich! Although I have never had left overs when I make this dulce de leche cheesecake.
Method
Crush your biscuits in a blender and melt butter to form a soft crunchy base in a spring form tin
Set your biscuits base to the bottom of your tin (no need to go onto the sides)
Combine cream cheese with eggs beaten in one at a time then add cream
Add sugar and vanilla essence
Gently drop in blobs of caramel and stir through with a spatula gently
Add mixture to biscuit base the consistency is quite thick so use a spatula to spread out
Bake for 45 - 50 min until the top is golden brown
Leave in oven for a further 40 minutes with door ajar
* Decorate with left over crushed biscuits and caramel
